I’m enjoying the return to fruit Friday. Today we have a combination of mango, orange and pineapple slices. The beet coloured fruit is also pineapple that was left to soak in a glass of Zoborodoalso called zobo. A drink made from dried Roselle plant flowers (a species of Hibiscus) the zobo takes on some pineapple flavour and the pineapple takes on some zobo tang. Win, Win.
