Klaklo pancakes

IMG_8862

So I grew up with klaklo but recently found out that it is not Nigerian, it’s a recipe from Côte d’Ivoire.
You take some blackened/ overripe plantains and toss in a food processor with flour, onion, and spice with pepper flacks and salt. I tweaked it by cutting the flour for a lighter batter. Instead of deep frying it like a puff puff, I fried like a pancake. I’m going to call Klaklo pancakes a native lunchbox original (muhahahhahahah, cough, cough!) boiled egg and apple side.
