Boli

    Boli is roasted plantain sold on the road side, sometimes with pepper sauce but good in its own right. To be honest I didn’t know if I could make it and when I was packing it up I was told,
    “Silly girl, you don’t put salt on boli.”
    Undeterred I responded, “Ha! So it does look like boli… success!”
    My one regret is that I experimented on just one plantain; luckily I had some palm oil beans and a boiled egg waiting in the wings. Result!
