Egg salad sandwich


    I know this looks kind of dreary, but it was probably my favorite thing this week. I really love this wheat bread (from Shoprite) which I toasted and lightly buttered. The egg salad is very simple: Two boiled eggs mashed with a fork and mixed with very little mayo and mustard, then spiced with salt and black pepper. SOooooooo GOOD! I bought 50 naira worth of boiled peanuts because they are finally coming into season. I didn’t shell them because they were quiet pail and not as cute as these. I added a sachet of pineapple nutri-C to mix with my usual water.
