Chapo and peanut sauce

    This is another one of those dishes I eat that is not strictly Nigerian. It’s an East meets West African deal I made chicken peanut stew (mainly eaten in Niger, Senegal and Gambia I think) I used peanut butter in place of the traditionally grounded peanut paste. I ate the stew with chapatti which we sometimes call chapo in our house (originally Indian but adopted long ago into Kenyan cuisine) c’est bon!
