I’m working on shortcut in the moi moi making process. FOR SCIENCE! So far the results are edible but less than ideal, but I ain’t no quitter. I masked my moi moi shame with some delicious fried plantain and asun (Goat meat) also a delicious red apple
I really enjoyed the two day Eid al-Fitr break here in Nigeria. A belated “Ramadan Kareem” to Muslims friends and “back to work” to the rest of us. Luckily I have Jollof, moi moi and fried chicken to console me.
Made from brown guinea corn and brown millet grains, pap aka ogi aka akamu is my version of chicken soup. I feel instantly better when I take it. Even when I’m not ill, it goes well bean based foods like akara or moi moi.
